Bringing Home the Bacon (Of A Different Sort)
It looks a little like pastrami, but has the texture of ham.
It’s Lobel’s of New York’s new Cottage Bacon.
I recently had a chance to taste a sample of this marbled, center-cut pork butt that’s cured and smoked, and has less fat than traditional strip bacon.
It’s like an artisan version of Canadian bacon with a wonderful sweet and smoky flavor that’s far more pronounced than your regular supermarket variety. It’s great for sandwiches or with scrambled eggs. I used mine to top grilled pizza with mozzarella and tomato sauce.
The cottage bacon contains no nitrates or preservatives, and is made from pigs raised by small, family farms in Canada.
A 12-ounce package is $11.98.
Because it’s shipped fresh, not frozen, it’s only sent via overnight delivery. So, there’s still plenty of time to send it as a holiday gift to a pork-loving friend — or to yourself.

I love bacon even though I don’t indulge as much as I used to. However this sounds wonderful especially since it contains zero nitrates.
That looks delicious! I love the idea of a no nitrate or preservative bacon too. When I was in Canada I saw something similar but didn’t get to try it.
