Sweet On Big Picture Farm Caramels

They are creamy, sticky, buttery, redolent of caramelized sugar, and come in some surprising flavors.

Big Picture Farm caramels, of which I received a sample, are made by a family farm in southern Vermont using milk from their herd of adorable goats.

The farm is completely solar-powered. Its 100 acres are grazed by the goats on a rotational basis to maintain soil health. The caramels also make use of local ingredients from their fellow farmers.

Owners Louisa Conrad is a photographer and mixed-media artist, and her husband Lucas Farrell is a writer and poet. And it shows.

Her delicate line drawings of goats grace the products, and his evocative words tell the story of their farm on their website and packaging.

In fact, the images of the goats and even their names appear on the boxes and bags to let you know which of their goats provided the milk for the candies. For instance, for my box of 20 caramels, the milk came from Fern, Orion, Gertrude, Manhattan, Junebug, Cicada, C.J., Stella, Eva, Becky, Eloise, Meridien, Solaris, and Luna.

Their caramels have won a host of honors, including “Best Confection” four times at the Fancy Food Show, and three Good Food Awards.

They are made with the family’s farmstead goat milk, organic sugar, organic tapioca syrup, cream from Vermont cows, and additional ingredients, depending upon the flavor, including Vermont apple wine, Vermont rhubarb wine, espresso, and mint.

Although still sweet, these caramels are not cloying. They possess greater balance and depth of flavor, owing to the subtle musky tang of the milk.

My sampler box ($25) contained eight flavors: Sea Salt & Vanilla, with the little touch of salt being the perfect addition to this confection; Chai, which tasted just like the milky spiced tea; Maple, which will make you immediately imagine warm, buttered pancakes; Cocoa Latte, with a milky coffee note; Brown Butter Bourbon, with a very rich and deep caramel taste thanks to the addition of brown sugar; Cider Honey, which tastes like a mug of warm autumn apple cider; Chocolate Mint with a delicate minty quality that builds gently on the finish; and my very favorite of Raspberry Rhubarb that’s just such a surprising flavor so reminiscent of spring pie-baking.

Five caramels have 190 calories, 4.5 grams of total fat, 190 milligrams of sodium, 35 grams of carbohydrates, and 6 percent each of the daily recommended amount of calcium and iron.

Too early to think about Valentine’s Day gifts? Not when they’re this sweet and memorable.
