Why do all the cooking for your next soiree when you can have this baby parked in front of your house or office instead?

Sancho’s Taqueria, famous for its killer fish tacos, has debuted a new catering truck that will roll on over to your venue of choice to prepare all-you-can-eat tacos. Yes, that includes tacos filled with fish, al pastor, carne asada, choriza, pollo asado, and the like. Chips and salsa are included; drinks are extra. You need a minimum of 30 people to have the truck for 90 minutes. The cost for this feeding frenzy? $600.

Playing With Fire

It was a brisk morning in St. Helena, but troughs of burning, glowing coals provided warmth as we gathered together, our appetites already primed for the charred, long-simmered delights yet to come.

We were there to watch three Mediterranean culinary stars demonstrate the ancient art of cooking over fire: Mourad Lahlou, the Marrakech-born chef-owner of Aziza in San Francisco; esteemed cookbook author Paula Wolfert; and Haouari Abderrazak, chef-owner of Haouari Restaurant on the island of Djerba, Tunisia.

It was all part of the recent “Worlds of Flavor International Conference” at the Culinary Institute of America’s Greystone Campus. This year’s theme was: “A Mediterranean Flavor Odyssey.”

Shrimp and fish brochettes sizzled on a grill, as Abderrazak mixed up a boldly flavored red sauce of tomatoes, olive oil, lemon juice, and harissa (a blend of chiles, cumin, coriander, and caraway) to accompany them.

Lahlou planned to make lamb tangia — chunks of lamb shoulder simmered for 12 hours with saffron, garlic, preserved lemons, and ras el hanout (a Moroccan spice blend that can contain about 50 ingredients, such as ginger, anise, cinnamon, nutmeg, cardamom, turmeric, and dried flowers).

It is made in a tanjia, a clay vessel that is sealed with wax paper, then buried in hot coals or wood ash to cook.

A Dang Good Burger

If a shrine could be built for a burger, fans of Father’s Office gastropubs in Santa Monica and Culver City would erect one to be sure.

Sang Yoon, a South-Korean-born chef who has worked with the likes of French culinary genius Joel Robuchon, turned his back on fine-dining to create these two casual, fun, hip pubs that serve gourmet bar food and 36 craft beers on tap. Smoked eel with poached egg and horseradish creme fraiche, anyone?

It is his “Office burger,”  though, that has got tongues wagging and teeth chomping for seconds. A $12 burger made of dry-aged strip steak, bleu cheese, arugula, and onions caramelized with a splash of sweet-tangy balsamic. It trounced other chefs’ creations in a “Today Show” cook-off. Esquire and Chowhound fanatics have labeled it the best around. Indeed, foodies have deemed it a “masterpiece” of burger-dom.

But the real question, of course, is what my hubby, aka Meat Boy, would think of it. He had been looking forward to sinking his teeth into one ever since we planned our recent Los Angeles trip.
