What happens when a Mexican restaurant that’s more than half a century old undergoes a 9-month overhaul?

Wonderful things, as in the case of Pedro’s in downtown Los Gatos.

Not only did it get a slightly fancier name, Pedro’s Cocina & Cocktails, but also a new stylish interior, as well as a former fine-dining chef in the form of Julio Aguilera, who hails from San Francisco’s Michelin two-starred Saison.

The Saison connection makes absolute sense when you realize that both that restaurant, along with Pedro’s in Los Gatos and Pedro’s in Santa Clara, are co-owned by Silicon Valley entrepreneur Jag Kapoor.

But don’t worry that your neighborhood Mexican restaurant has gone all chi chi. The Los Gatos restaurant may have gotten a revamp late last year, but it remains a comfortable, casual place serving many of its classic favorites along with some more updated fare.

Diners seem to be embracing the new look and menu, as evidenced by the steady stream coming through the door on a rainy and windy Thursday night when I dined. Although my husband and I paid our tab, the chef sent out a couple dishes on the house for us to try.

Go North — In Downtown Los Gatos

Downtown Los Gatos has never been a stronghold of ethnic cuisines, so it was a welcome sight to see North open its doors last summer.

Named for its location on North Santa Cruz Avenue, this lovely restaurant serves contemporary Vietnamese cuisine with California influences. It’s a collaboration between two veteran restaurateurs: Hanna Pham, who for years had 19 Market in downtown San Jose; and John Le, who had the popular Three Seasons in downtown Palo Alto.

From all appearances, it’s already a hit in the community. The warm dining room, done up with a mural of a Vietnamese woman in a traditional ao dai, antique mirrors, reclaimed wood, and a wall of living plants, was packed the night my friends and I dined in December, paying our own tab at the end.

Start with one of the fun cocktails, such as the Non La ($15), a play on a gin sour. The chic coupe is a study in green from the house-infused matcha gin blended with yellow chartreuse, orgeat, and lemon. Its frothy top is made of foaming bitters. A gold-hued turmeric-ginger tincture is poured atop through a stencil to recreate the restaurant’s logo, which on the drink almost looks like a pair of puckery lips. It’s an elegant drink that/s tangy, grassy, citrusy and delicious.

The Lexington House Makes A Splash in Downtown Los Gatos

With its speakeasy vibe, complete with exposed brick wall, stone arches and impressive back-lit shelves stacked high with small-batch spirits, The Lexington House would be perfectly at home in San Francisco’s eclectic and electric Mission District.

But the surprise is that it’s actually in downtown Los Gatos.

No disrespect to that South Bay city intended. It’s just that this lively spot has a hipster personality that’s rare in this region.

That’s probably due in large part to its owners, Stephen Shelton and Jimmy Marino, who took the former Domus lifestyle store back to its roots, playing up its architectural features to the hilt. You can tell Shelton and Marino harbor a sense of fun just from the descriptions on the restaurant’s Web site, which state that, “Unattended children will be given espresso and a free puppy,” and that there is no dress code for diners, ” But please have all your most private areas covered at all times. Yes, that means you.”

The Lexington House opened last September. Already, it’s packing in the crowds, as evidenced by a recent Wednesday night when I was invited in as a guest of the restaurant.

Shelton and Marino often can be found behind the bar, crafting the restaurant’s signature cocktails, such as the Winter Fashion ($12), a blend of cognac, walnut liquor, gum syrup and bitters. The cocktail menu is arranged from lightest to heaviest options. The Winter Fashion was positioned in the last third of the menu, and it was plenty strong yet caressed the palate with its orange notes and hints of nuttiness.
